La Zita di Polignano is born from the pure use of a great white grape variety, Chardonnay. Like all wines from San Tommaso Winery, it comes from vineyards within the estate located in the countryside of Polignano, at the foot of the masseria, at an altitude of about 110 meters. The vineyard, approximately 1.1 hectares in size, faces west. It is situated on soil that is very rich in calcareous lithoids and marine-origin sediments. The soil characteristics and precision management aimed at maximum quality result in a yield ranging between 60 and 70 quintals per hectare.

The color is greenish-yellow with straw reflections. Its aroma stands out for exotic notes such as passion fruit, pineapple, and citrus. On the palate, it is mineral, pleasantly fresh, and distinguished by a savory, lingering finish.
